My new weekly dinner staple.

You know how during the week you have just one of those days - can’t get out of bed, day flies by and you want a quick warm meal for dinner?  That was my Monday.  My go-to dinner on such day - ground turkey, zucchini and squash.  It’s quick, easy and carb-free!

Step 1: Pre-heat oven to 350 degrees.  Slice zucchini and squash, place on baking sheet so each piece is flat and spray with olive oil.  Salt and peper to taste and place in oven.

Step 2: Chop white onion and lightly saute in pure olive oil.  Add minced garlic and ground turkey and cook till no more pink.

Step 3: When zucchini and squash are between mushy and firm, take out of the oven.  Line a casserole dish with the z & s.  Then layer ground turkey on top.  Scoop a few small globs of low-fat ricotta and/or shredded cheese of your choice.  Layer again with z & s, ground turkey and cheese.

Step 4: Place back in oven to warm up/cheese to melt.

I eat it as is.  Also delish with whole wheat orzo.  Added bonus - add baby spinach in the mix for some extra greens!

Clean Dark Chocolate Peanut Butter Cups

Another thank you to Clean Eating.  The original recipe is for Almond Butter Chocolate Cookies.  I made a few substitutions (not too many since there are only 6 ingredients!) and came up with this deliciousness.

Substituted natural peanut butter for the almond butter and organic agave nectar for the succant.  Also threw in double the amount of sea salt since I love the taste of sea salt and dark chocolate.  Add in an organic egg, baking soda and dark chocolate chips and you’re ready to bake!

The Crazy Richard’s peanut butter I used wasn’t as thick as I expected and it was difficult to keep the cookie shape.  Solution? Peanut butter cups!!  Put the batter in muffin tins, without liners.  Bake at 350 degrees until the sides started to golden.

1c. natural peanut butter
3/4c. organic agave nectar
1 organic egg
1/2tsp baking soda
1/2tsp. sea salt
dark chocolate chips, to your tasting

Stir all ingredients, except dark chocolate.  Then, mix in chocolate.  Drop into muffin tins and bake at 350 degrees until sides are golden.

NEW Chobani flavors!

If you’re still in the dark about Greek yogurt.. it’s time to step into the light.  Delicious, nutritious and oh so tasty.  Packed with protein and one ingredient, yogurt!

And thanks to Chobani 0% for expanding their flavor selections.  Of course the standard blueberry, strawberry and peach combo pack; plain, which I love to mix with fruit and honey; raspberry and pomegranate.  Newest to Chobani… Apple Cinnamon and Blood Orange.  And oh is the Blood Orange yummy!!  It’s like a burst of flavor in every bite, cliche but true.  Thanks Chobani for expanding my morning breakfast options.

Sunday Morning Bliss

I treasure sleeping in on Sunday mornings.  Doesn’t happen too often so I’ll take it when I can.  The best part to a lazy Sunday morning - brunch.

Who says you can’t get a delicious brunch at home?  For today’s Sunday morning brunch, I took motivation from my favorite breakfast joint, My Kitchen Witch in Monmouth Beach, NJ.  Kitchen Witch offers healthy comfort food and the best hazelnut coffee around.

On the menu: Two eggs over easy on fresh spinach, reduced-fat feta cheese, cherry tomatoes on whole wheat toast with a side of fresh fruit.  And beverages: tea or coffee and Simply Orange (champagne optional).

This meal is quick and easy to make.  What you’ll need: two pieces of whole wheat bread, two (organic) eggs, reduced-fat feta cheese, fresh baby spinach, cherry tomatoes and whatever fresh fruit you have. Today I had an apple, blueberries and strawberries.

Pop the toast in the toaster.  Once toasted to your liking, place on plate and top with spinach, tomatoes and feta.  Get the eggs cooking the stove.  While they’re cooking, cut up fruit and place on the plate.  Once eggs are cooked to your level of runniness, place on top of toast & toppings and enjoy!

M.A.C. for free??

I am a M.A.C. girl.  From my under-eye concealer (for the dark circles under my eyes that my mother tells me I’ve had since I was little) to my lipstick to my brushes.  My skin feels good when I wear it (and stays blemish free).  There are hundreds of eye shadow color options.  And they have the best mascara around - the Haute & Naughty Lash. There are two wands in the same tube - 1. a standard wand for day time use and 2. a thick go-get’m-girl wand for night time.

But my favorite thing about M.A.C.?  Their Back to M.A.C. recycle program. That’s right, they recycle your compacts, lip stick tubes, eye shadows, etc.   And what do you get when you recycle them back to M.A.C.?  FREE makeup!!

For every six empties you bring back, you get to choose any lipstick!  How fabulous is that?!  Dying to try that fire hydrant red lipstick, but not ready to make the buy? Bring back you’re empties and try it for free.

You’ll be seeing me very shortly M.A.C. Get ready!

Best whatever-food-is-in-your-fridge dinner.Stir fry!  At the end of the week, when those peppers and veggies you had full intention of eating during the week are just starting to shrivel, perfect ingredients for a colorful, healthy stir fry.Start by chopping up your left over veggies and protein.  In a large saucepan, with tall sides to keep all your yumminess in, coat the pan with olive oil and throw in minced garlic to your taste.  Add in your veggies, make sure to put the onions in a few minutes earlier since they take longer to cook, and let them cook up.  Add your protein towards the end and cook to appropriate temperature.  You can plate with rice, quinoa or other grain or just eat as is (I’m attempting no carbs past 6pm… let’s see how this goes).Tonight, and picture above, I combined red, green and yellow peppers, red onions, broccoli and buffalo chicken sausage. Yummy Yummy!

A Hidden Treasure… Shoe Bags!!

Some great designers, like Tom’s, Christian Louboutin and Dolce Vita, are already in the know and have a shoe bag waiting for you when you open the box with your new fabulous shoes.  And of course you know that my love, Lilly Pulitzer, provides a colorful print shoe bag with every footwear purchase. (And for those of you who have shared the experience of the Lilly Warehouse sale with me, I spend more time picking out the shoe bag then I do the actual shoes.)

Doesn’t matter which one you choose, a shoe bag is more than just a shoe bag…

Of course, it is perfect for its intended use - carrying your shoes.  As I am on the road a lot these days and have meetings throughout the day, heels are not my friend.  So when I know I have a meeting to get to - I throw my heels in a shoe bag, into my purse and off I go.  A quick switch-out before my meeting, and my dogs are not hurting by the end of the day.

What else can you do with a shoe bag? Well… if you’re going on an overnight trip and need to bring a few toiletries - throw them in a shoe bag… need to bring some small toys for your kids to play with when out to dinner - throw them in a shoe bag… need to throw some makeup in your purse for a quick touch up - throw them in a shoe bag… heading out after work and need to switch to a clutch - throw it in a shoe bag.

There are so many uses for your shoe bags… get creative!
