You know how during the week you have just one of those days - can’t get out of bed, day flies by and you want a quick warm meal for dinner? That was my Monday. My go-to dinner on such day - ground turkey, zucchini and squash. It’s quick, easy and carb-free!

Step 1: Pre-heat oven to 350 degrees. Slice zucchini and squash, place on baking sheet so each piece is flat and spray with olive oil. Salt and peper to taste and place in oven.
Step 2: Chop white onion and lightly saute in pure olive oil. Add minced garlic and ground turkey and cook till no more pink.
Step 3: When zucchini and squash are between mushy and firm, take out of the oven. Line a casserole dish with the z & s. Then layer ground turkey on top. Scoop a few small globs of low-fat ricotta and/or shredded cheese of your choice. Layer again with z & s, ground turkey and cheese.
Step 4: Place back in oven to warm up/cheese to melt.
I eat it as is. Also delish with whole wheat orzo. Added bonus - add baby spinach in the mix for some extra greens!
Another thank you to Clean Eating. The original recipe is for Almond Butter Chocolate Cookies. I made a few substitutions (not too many since there are only 6 ingredients!) and came up with this deliciousness.
Substituted natural peanut butter for the almond butter and organic agave nectar for the succant. Also threw in double the amount of sea salt since I love the taste of sea salt and dark chocolate. Add in an organic egg, baking soda and dark chocolate chips and you’re ready to bake!
The Crazy Richard’s peanut butter I used wasn’t as thick as I expected and it was difficult to keep the cookie shape. Solution? Peanut butter cups!! Put the batter in muffin tins, without liners. Bake at 350 degrees until the sides started to golden.
1c. natural peanut butter
3/4c. organic agave nectar
1 organic egg
1/2tsp baking soda
1/2tsp. sea salt
dark chocolate chips, to your tasting
Stir all ingredients, except dark chocolate. Then, mix in chocolate. Drop into muffin tins and bake at 350 degrees until sides are golden.

I treasure sleeping in on Sunday mornings. Doesn’t happen too often so I’ll take it when I can. The best part to a lazy Sunday morning - brunch.
Who says you can’t get a delicious brunch at home? For today’s Sunday morning brunch, I took motivation from my favorite breakfast joint, My Kitchen Witch in Monmouth Beach, NJ. Kitchen Witch offers healthy comfort food and the best hazelnut coffee around.
On the menu: Two eggs over easy on fresh spinach, reduced-fat feta cheese, cherry tomatoes on whole wheat toast with a side of fresh fruit. And beverages: tea or coffee and Simply Orange (champagne optional).
This meal is quick and easy to make. What you’ll need: two pieces of whole wheat bread, two (organic) eggs, reduced-fat feta cheese, fresh baby spinach, cherry tomatoes and whatever fresh fruit you have. Today I had an apple, blueberries and strawberries.
Pop the toast in the toaster. Once toasted to your liking, place on plate and top with spinach, tomatoes and feta. Get the eggs cooking the stove. While they’re cooking, cut up fruit and place on the plate. Once eggs are cooked to your level of runniness, place on top of toast & toppings and enjoy!
